If you think that Peking Duck is only a dish that you can find in Chinese restaurant, then you are wrong as the Majestic Group of restaurants under the Unlisted Collection Group has recently just opened a hawker stall - Majestic Peking Duck, selling Peking Duck at Makansutra Glutton Bay. Yes, you did not hear me wrong, this is probably the first Peking Duck hawker stall in Singapore or maybe even the world.

Organic Leafy Salad with Sliced Duck 4.2/5

We started with the Organic Leafy Salad with Sliced Duck ($12). The fresh greens tossed in a light sweet and savoury sauce, topped with grounded peanuts is the ideal starter to whet up the appetite.

Oven Roasted Peking Duck Wrapped in Pancakes 4/5

The highlight at the Majestic Peking Duck stall has to their Oven Roasted Peking Duck Wrapped in Pancakes ($24 for 10pc). The whole duck is prepared at the stall itself, roasted in an Apollo oven. It is then sliced, wrapped in pancakes and served as a platter.

Inside the pancake, you can find a thick succulent slice of the roasted Peking Duck accompanied with cucumber and scallion, dressed in a sweet hoison sauce. While I enjoyed the moist and juicy slice of duck meat, I thought the skin was not crispy enough. But overall, it is value for money as it probably costs double the price if you are having it in a restaurant.

Crispy Cereal Duck Fried Rice 3.5/5

Getting bored of pineapple fried rice or seafood fried rice? How about Crispy Cereal Duck Fried Rice ($8)? The plate of fried rice appears rather boring with not many ingredients. Even the duck pieces were hardly noticeable. However good thing needs time to appreciate. The more you chew on the grainy fried rice, you will start to appreciate the aroma as it slowly disperses and tickles your palate and senses.

Egg Noodles with Sliced Duck 3.8/5

For a one meal dish, you may want to try the Egg Noodles with Sliced Duck ($9). I like the fact that it comes with thick slices of Peking duck. I would recommend to let the dish sits for a while. This allows the crispy egg noodles to absorb the gravy for a lifted enjoyment.

It is nice to see that Majestic Group of restaurants has pioneer the idea of bring a restaurant dish to the hawker scene, making it more affordable for the general consumer. We have seen restaurants refining the local street food into restaurant's quality dish but maybe the vice versa will work too? Bringing restaurant quality dishes into the heartland and making it affordable to diners.

Fish & Chicks is a Western food stall started at a coffeeshop in Ang Mo Kio. Known for its popular salted egg yolk and chilli sauce fish & chips, it soon gained popularity on social media and crowd started to flock to the humble stall. Don't undermine the power of social media, diners need to queue up to 2 hours just to have a taste of their fish & chips once it went viral on social media. With the success, Fish & Chicks soon opens its second outlet in the food court at the basement of Cathay Cineleisure Orchard.

Salted Egg Yolk Fish & Chips 4/5

I have a meeting in town a couple of weeks ago and I took the opportunity to check out their second outlet at the basement of Cineleisure. I was surprised but glad that there wasn't a long queue like their Ang Mo Kio outlet. I placed my order and have my lunch served in less than 10 minutes.

After having a bite of the Salted Egg Yolk Sauce Fish & Chips ($10.90), I can understand why the hype. The batter was deep fried to a crackling crispiness and dressed in a rich salted egg yolk sauce. The salted egg yolk sauce is the creamy type instead of the more robust grainy version. Not what I prefer but still decent. The fish itself is moist and provided the nice contrast against the batter. Doubt they are using fresh fish since it is a fast food style business concept but the quality used is good enough.

Overall I find the Salted Egg Yolk Fish & Chips above average and it is worth trying, provided you do not need to queue for hours for it. If you want to skip the queue, I would advise going to the Orchard outlet as it seems that not many people is aware of it. Furthermore it is inside a mall which is air conditioned.

You Peng Noodle Dumpling House is located on the fourth floor of Beauty World Food Centre. The stall sells a variety of dumplings and noodles here. In my recent visit, I decided to patron the stall and try their Shanghai Fresh Meat Juicy Steamed Bun or more commonly just known as Xiao Long Bao.

The first thing I did is to pick up the xiao long bao on its tip using my pair of chopsticks. The skin was rather thick but resilient. You probably can tell from the picture. It could also be the reason why the xiao long bao was able to hold quite a lot of the soup it in.

While the pork filling is quite substantial, it had a porky taste which threw the experience off. I ended up dunking the xiao long bao in the dipping vinegar sauce to mask the porky taste.

For a mere $7 to get 10 pieces of xiao long bao is quite a bargain. If care is taken in the preparation to better remove the porky taste of the filling, I would have enjoyed it more. Nevertheless, I would like to go back and try their other dumpling and noodle dishes on the menu for a more complete review of the stall.

Located at ABC Brickworks Food Centre is an unassuming hawker stall by the name Gambateh Cafe (甘巴茶). Not known to many people, this stall sells their special Crispy Pandan Waffle with five different spreads. As per their facebook page, no artificial coloring or preservative are used. The stall extract the green coloring of the waffle 100% naturally from pandan leaves. No wonder there was a fragrant pandan smell when I approached the stall.

Crispy Pandan Waffle with Peanut and Blueberry 4/5

I ordered the Crispy Pandan Waffle with Peanut and Blueberry ($1.50 each). Other spreads that are available on the menu are chocolate, kaya and cheese. The waffle here is very crispy on the outside while the interior is fluffy and has a beautiful pandan scent.

The crispiness of the waffle felt like eating a toasted focaccia sandwiched with your preferred spread. Of the two I tried, I preferred the peanut spread more than the blueberry spread. Ok I admit I am biased here as I like peanut butter. Basically there is a choice for everyone. You can also top up fifty cents for a scoop of ice cream.

Grass Jelly 3.8/5

For a light and refreshing dessert, there is the Homemade Grass Jelly ($1.50). The wobbly and tender grass jelly is made from the extract of aged and slightly oxidized stalks and leaves of Mesona chinensis after long hours of boiling. The only thing I dislike is the ice cubes. I would prefer shaved ice instead.

Do drop by the stall to try their crispy pandan waffle. It is something different for a change. This is probably a hidden find that is not known to many yet.

Hotel Boss is a new hotel that has recently opened in Lavender, Singapore. I have been to some of the food establishments in the vicinity such as Founder Bak Kut Teh but I did not know that behind the hotel, along the canal, there are also a few food establishments which is not visible from the main street.

If you are looking for somewhere to chill, Gills & Shells has a bar offering a good selections of cocktails and mocktails. For my pre-dinner dinrk, I opted for the Beergarita ($22.90) that consists of Corona, Tequila, Triple Sec and Lime Juice. A light drink to kick start the dinner.

Spicy Buffalo Frog Legs 4/5

We were quite taken back when the Spicy Buffalo Frog Legs ($16.90) was served. The size of the frog legs were huge, fat and juicy. I enjoyed the re-interpretation of the buffalo wings, replacing it with the frog legs. A good change from the usual.

Depend on the season and supply, Gills & Shells offers fresh shucked oysters from varies countries. The Freshly Shucked Oysters ($22.90 half dozen) is served with homemade marmalade and French red wine vinegar sauce.

Clams and Mussel 4/5

Another shellfish dish on the menu is the Clams and Mussels ($15.90). The shellfishes are cooked in a spicy white wine clear broth with herbs, garlic, onions & chilli. It is best to enjoy the broth by dunking the focaccia toast into it to soak up the beautiful flavour.

I was craving for a glass of beer when I had the Lobster Roll ($24.90) tossed in the delectable Chef's specialty sauce. Sandwiched in between the bun is chunky pieces of succulent lobster meat. The dish also comes with a choice of rice (pilaf), fries or mashed potatoes.

Truffle Infused Cod 4.5/5

The dish that stole my heart at Gills & Shells is the Truffle Infused Cod ($24.90). The highlight of the dish was not the truffle but the chye poh topping. The Asian influenced pairing of chye poh with cod fish works excellently, complementing each other. In fact, the truffle was not necessary to me. I would rather let the chye poh be the star. It comes with a choice of rice (pilaf), fries or mashed potatoes.

Hae Bee Hiam Pasta with Soft Shell Crab 4/5

The Salted Egg Pasta with Tiger Prawns ($18.90) and Hae Bee Hiam Pasta with Soft Shell Crab ($18.90) is two new additions to the menu. The salted egg pasta is slightly different from the norm. On top of the salted egg sauce, there is a peppery kick to It felt like having an aglio olio pastas with black pepper salted egg sauce. A different execution of the salted egg yolk sauce which delighted my palate. The Hae Bee Hiam Pasta with Soft Shell Crab is the other Asian influenced dish on the menu. The dried shrimp chilli tossed together with the pasta provided that extra lift in flavour.

To be frank, I did not have much high expectation of the food until I tried them. I was pleasantly surprised that the kitchen did a good job. My most memorable dishes are the spicy buffalo frog legs, cod fish and pastas.

In our food courts and hawker centres, Mala Hotpot is ubiquitous but in China, what's popular is not just that. With over 750 outlets across China, Shi Miao Dao Yunnan Rice Noodles (十秒到过桥米线) is here at Vivocity Food Republic to introduce to you another of their heritage dish from Yunnan - “crossing-the-bridge rice noodles”; where vermicelli and assorted ingredients are tossed into a boiling bowl of soup to cook within 10 seconds, hence the name 十秒到。You get your noodles in 10 seconds.

Besides their signature rice noodles, it offers a selections of appetizers on their menu at $2 each. During our visit, we tried some of them such as the Sweet & Sour Radish, Beancurd Skin, Old Vinegar Peanuts and Old Vinegar Black Fungus,

Old Vinegar Black Fungus 4.2/5

My favourite is the Black Fungus, pickled with their homemade Old Vinegar. The Old Vinegar has a slightly thicken texture which coats the black fungus thinly. Not just a harsh sourness often given by white artificial vinegar, it flavours the crunchy fungus with a tarty wildhoney - like sweetness. For $2, I feel the portion can be more generous, especially when the small plate can't hold much of the puffy flowers.

Something new is their crunchy peanuts, which is roasted in-house as well. Not braised but drizzled with the Old Vinegar, the nutty and vinegary taste makes it just as moreish.

Like a ramen broth, their base stock is made from brewing chicken and pork bones for 6 hours. There are 4 different soup base to choose from for your noodles. If you want a taste of the natural sweetness of the soup, simply order their Original ($7.80) and you get to savour the natural creamy white body of the soup. Noodles should be the last to be thrown into the soup so as to absorb all the flavours from the meat and vegetables. Their special rice noodles is almost as thick as our thick rice noodles but much more silkier and lighter, which is perfect for slurping as there's minimum friction!

All sets come with the rice noodles, chicken drumlet, quail egg, pork ham, beancurd skin, black fungus, white fungus, corn and assorted vegetables. Seafood option is also available. Additional pork ham and fish slices will be $1 per portion. The lightly braised chicken drumlet adds some weight to the dish which may otherwise be too light for some diners, like a fish soup. The fungus add crunch to the silky noodles, while the corn punctuates the soup with bursts of sweetness. What I don't quite appreciate is the thin slices of rather tasteless ham. In comparison, even the unassuming tiny quail egg seems to add more character to the entire dish.

Fortified with fresh, crushed tomatoes, the Tomato Soup ($8.50) is savoury, tangy and richer in taste than the Original. The noodle was also more well flavoured as the slightly thickened soup seemed to coat each strand of the noodles. It could be my favorite potentially if not for the saltiness.

Pickled Cabbage Soup 4.2/5

The Mala Soup ($8.50) has 3 levels of spiciness for you to choose from. It carries just a slight aroma of the spices and I find the flavor rather one dimensional, perhaps due to the lack of real spices. If I want something stimulating, I would much prefer the Pickled Cabbage ($8.50) enhanced with finely grated cabbage and green chilli pickled in aged vinegar. The soup is sharp with spiciness but at the same time has the tang and sweetness akin to a pickled Sizhuan vegetable soup. Even if I'm suffering from a cold, my appetite would wake up to this.

Knowing the story behind this “crossing-the-bridge rice noodles” may deepen your appreciation for it. Legend has it that a woman dutifully crossed a bridge daily to an island to bring to her husband his mid day meal while he studied for his imperial exams. Earthen pot was used to keep his meal hot and fresh which she filled it with boiling broth and added in the noodles and other ingredients to cook only when he was ready to eat. If you want to have a taste of this legendary noodles, just come down to the Food Republic at Vivocity.

Creamier @ Gillman Barracks - Honestly Good Handmade Ice Cream and Coffee

If you have not known, the popular Creamier at Toa Payph has opened a second outlet at Gillman Barracks. The new outlet is more spacious and has a bigger floor area compared to their flagship outlet. It has both air conditioned and alfresco sitting area.

It was a rather hot and humid afternoon when we visited the new outlet. To cool ourselves from the afternoon heat, we ordered the Ice Matcha Latte ($5.50) and Ice White ($6). The perfect drinks to cool ourselves from the heat.

Waffle with Ice Cream 4.5/5

A must try at Creamier is their Waffle with Ice Cream ($8,80). Creamier is known for their ice cream so we ordered an addition scoop for $2.80 (add $0.90 for premium). The ice cream is creamy and smooth with beautiful flavours. The waffle was also crispy on the exterior and fluffy inside. Definitely one of the best waffle I have eaten.

I have tried going to Creamier at Toa Payoh a few times but it is always very crowded. I have never gotten the chance to dine at the cafe in Toa Payoh. I am really glad that it has decided to open a second out which is nearer to where I stay and there are more seating space here.

Sitting on the rooftop floor of Hilton Hotel Singapore is an award winning Italian restaurant, il Cielo, lead by Italian Chef Riccardo Catarsi, a new menu has been crafted to create a sensorial dining experience for diners. Same as Opus, il Cielo has been awarded with Marine Stewardship Council (MSC)'s Chain of Custody certification. MSC certified means sustainably caught seafood sources and dishes prepared with such environmentally ingredients can be identified by the eco-label in the menu.

Right at the top on 24th storey with city skylines in full view, just feeling the evening breeze against my face was rejuvenating. As the restaurant opens up to the pool, it has that relaxing charm of a rooftop bar without compromising its elegance.

Our starter was Buffalo Milk Burratina ($25) that sits like a lady (a rather plump one) on a layer of marinated tomato carpaccio, basil cream & olives. The tangy sweetness from the tomato and the mild peppery flavour of the basil gave the dish just the right punch without overwhelming the fresh milkiness of the pillowy cheese.

One of the new MSC dish is the Hokkaido scallop ($28), adorned with roasted mushrooms, pine nuts and bottarga mayonnaise. If the burratina is a young plump princess, this to me is like a queen. It reminded me of a Japanese dish I once had over at Mikuni at Fairmont but instead of pairing it with its ocean relatives, it was being placed in an earthy pasture of roasted mushrooms, truffles and pine nuts. The truffles appeared to be just ornamental, what really hyped up the taste is the bottarga mayonnaise. Bottarga is an exquisite cured fish roe and when mixed with mayonnaise, it was like an Italian-born Mentaiko sauce. Savoury and tangy, it woke up my tastebuds for the mellow scallop.

Pumpkin Charcoal Ravioli ($24) with chickpeas cream, red onion & Modena balsamico. This is a black beauty. The black petal was a thin pasta pouch that unveils a puree of golden pumpkin which is in season back in Chef Riccardo's hometown. This enigmatic looking dish has a harmonizing sweetness, balanced with a tartness lent by pickled red onion and Modena balsamico. Should Chef turns to using the more common squid ink for the aesthetic, the flavour would have been completely off sync with the overall feel of the dish.

The Spaghetti with Maine Lobster ($39) may look stiff but each strand was surprisingly well flavoured and al dente. The tomato sauce had a light creamy body and embedded within is aromatic Italian basil and savoury bottarga, which tickled my nose and taste buds as I took in the pasta. When the maine lobster was so supple and sweet, it would have been a huge letdown if the pasta was not executed to such excellency.

The charcoal bread dust on top brought an unexpected flavour to the buttery sweet Toothfish ($45). The roasted pumpkin cream, with an inherent sweetness, was punctuated with earthiness and charred flavour from the grilled asparagus and cauliflower. A crowd-pleasing dish.

Whole Seabass ($68) roasted on olive wood The whole seabass was presented to us in sizzling heat on olive wood. As spectacular as it may be, it didn't manage to delight me as much as the rest. With its skin removed, I thought much of its flavour was lost.

Not known to many, Chef has a solid foundation in dessert making. Perhaps, his appreciation for beauty comes from there, where he got the inspirations for creating all the ascetically pleasing dishes since the start of the evening. I think this is the first time that I have had such pretty desserts in an Italian restaurant.

Chef's gelatos is a must try. Tiramisu Mille Foglie ($14) is coffee centric, like eating a solidified vanilla coffee frappacino. The feeling I had when I saw Composizione Di Frafole ($14.00) is like stepping into a strawberry field. Strawberries in different forms, textures, sweetness and tartness.

Drop by at il Ceilo, and discover its quiet beauty amidst the urban traffic. Not just dinner, lunch sets are available here as well. On Thursday to Saturday, enjoy live acoustic music over at the Sky Bar, just right next to it.

River South (Hoe Nam) Noodles House (河南肉骨大蝦面) is a well known prawn noodle stall in Macpherson area which was first established in 1971. I probably should not labelled it as a stall as they owned the entire coffeeshop selling the popular prawn noodles. Over the years, a simple bowl of prawn noodle has included more variety to suit the taste and request of customers such as pork ribs, pig tails, pig intestines and even baby abalone.

Prawn Noodle Soup with Pig Tails 4.2/5

There is around 10 variety of prawn noodles available at the stall. First I tried the Prawn Noodle Soup with Pig Tails ($5.50/$7.50/$10). I had the medium size at $7.50 which comes with 3 huge prawns and succulent pig tails. I like the fact that the prawns are peeled, leaving on the head and tail. It allows for easy consumption and at the same time enhanced the presentation. The cloudy soup was sweet and robust with the beautiful prawny flavour. If you need a further kick to the soup, you can help yourself to the chilli powder on the table.

Prawn Noodle Dry with Pork Ribs 4.5/5

Beside the prawn noodle soup with pig tails, I also tried the Prawn Noodle Dry with Pork Ribs ($5.50/$7.50/$10). The noodle and soup is served separately. I find the soup tasted sweeter compared to the prawn noodle soup version. I suspect this is because of the noodle in the soup diluting it, reducing the sweetness. The other highlight of the dry version is the chilli sauce and fried shallot that enhanced the whole enjoyment of the dish.

Actually this is not my first visit to the stall. I tried to check out the place on several occasions but I have ended in disappointment. Not sure why but it was closed during my previous visits. It seems like they don't really follow their business hours. Hence do prepare for disappointment if you plan to check out the place.

We started with something light on the menu in the Fried Carrot Cake in X.O. Sauce ($9.80). The radish cake comes in huge chunky cube with crispy edges tossed in the aromatic X.O. sauce. It is further coated with egg to enhance the flavour with the bean sprouts giving it the extra crunchiness.

To warm our stomach before starting on the mains, we had the Double-boiled Shark's Bone Cartilage Soup with Bamboo Pith, Dried Scallop and Fish Maw ($26 per portion). The collagen rich soup is comforting and packed with beautiful flavours, infused with the essence of the delicacies.

A dish that will delight the youth is the Crisp-fried Prawn with Wasabi Salad Cream ($23.80). The crunchy and plump prawn is coated in a vibrant wasabi salad cream sauce that will stimulate the nasal passages with its pungency. A sensorial experience in the execution.

For a balance diet, we ordered the Braised Homemade Beancurd with Fresh Crab Meat and Local Spinach ($18). This is like a three in one dish. You get to have your vegetable, silky tofu and fresh sweet crab meat.

Stewed Vermicelli with Sliced Fish, Bitter Gourd and Black Bean Sauce 4.5/5

One of my favourite dishes is the Stewed Vermicelli with Sliced Fish, Bitter Gourd and Black Bean Sauce ($16). I enjoyed how the black bean sauce coupled with the wok-hei aroma gave the stewed vermicelli a character on its own. The addition of sliced fish and bitter gourd is like jewels on a crown, completing the homely and yet comforting noodle dish.

Roasted London Duck 4.5/5

A highlight at Peach Garden Chinese Dining has to be the used of the London Duck, also known as the wagyu of duck. The reason why the Roasted London Duck ($68 Whole/ $35.80 Half/ $18 small) is gaining popularity in Singapore its because of the succulent texture and that layer of fats underneath the skin. This is one dish that you must order from the menu.

Roasted Crispy Pork Cube 4.2/5

Since we are already having the roasted london duck, might as well add on the Roasted Crispy Pork Cube ($12.80 per portion) to the platter. The crackling skin, together with the succulent and juicy meat is just too good to be only be served in portion in accordance to the number of guests. I wish there are more of it.

Wrapping up our wonderful lunch in a sweet note, we have the Chilled Fresh Mango, Sago with Pomelo ($8) and Chilled Black Glutinous Rice with Ice Cream ($8). For an additional $3, the desserts are served in a coconut husk. I could not decide which is my favourite as both are as good, so we ended up sharing to enjoy the best of both world.

Be it that you want to have a quick lunch before flying off , to host a business lunch or family gathering, the restaurant offers the perfect setting to do so with its 180 seating capacity and three private room. In celebration of its opening, the restaurant is offering an opening special for its signature suckling pig at $168 (U.P. $238). Advance order is required. Diners will also get to enjoy a complimentary serving of deep fried chicken in szechuan style. The opening specials will be available up to 31 August 2016 only.

After my last visit to Maggie Joan's Dining & Barat Amoy Street last year, I am back again to the underground dining place, where the main entrance is located in the back alley to check out their expanded lunch menu of contemporary Mediterranean dishes. Chef Oliver has put together an assortment of starters, mains and sides using the freshest produce by incorporating familiar flavours of the Mediterranean to the dishes.

I hate the fact that the restaurant serves the complimentary Homemade Sourdough and Smoked Beef Fat Butter. This is too good to just stop at one. Unknowingly I probably have eaten a bit too much and already feeling a bit full after it.

This is not your ordinary Cheese Arancini ($9). The risotto ball come with four different types of cheeses. There are gorgonzola, epoisse, langres and ricotta. Cheese lover will adore this. The tomato chutney sitting on the bottom of the plate, provided the extra lift and dimension to the dish.

If you feel like eating clean, then the Cured Salmon Tartare ($17) is the ideal choice. The clean and sharp taste of the cured salmon is further topped with dill, pickled cucumber, sourdough crouton and yoghurt. One of my favourite dishes on the new menu, allowing me to enjoy the freshness to the fullest.

Gypsy Style Baked Egg, Chickenpea Stew & Chorizo 4/5

The Gypsy Style Baked Egg, Chickpea Stew & Chorizo ($16) is served together with some milk bread. The Spanish inspired spiced chickpea stew comes with layers of textures and flavours. The more you dig into it, the different play of flavours tend to come through, coming together as one.

Homemade Pappardelle 4.5/5

Not to be missed is the Homemade Pappardelle ($26). The freshly made pasta sheet is tossed with chilli paste and paired with 12 hours roasted lamb shoulder. It is then topped with parmigiano reggiano. The highlight has to be the flat and broad pasta sheet which comes with a delightful bite. Not to forget the flavourful and tender lamb ragu which rounded off the whole experience. This is a dish I will definitely go back for.

Fried Chicken Sandwich 4.2/5

The Fried Chicken Sandwich ($18) is dressed with green harissa, coleslaw and pecornio cheese. It is actually quite fresh to have the combination for a chicken sandwich. The condiments did not steal the limelight of the tender and juicy fried chicken, but instead complement it. The focaccia texture like bread is another excellent choice for the sandwich.

Hand Cut Chips, Rosemary Salt & Ricotta 4.2/5

The instant the Hand Cut Chips ($9) is served, I could smell the beautiful aroma of the rosemary. The hand cut Sebago potato Chips are steamed and blanced in oil at 140 degrees and then deep fried at 220 degrees. Lastly seasoned with rosemary, sherry vinegar and Maldon salt. Dip it into the creamy ricotta sauce for an elevated enjoyment.

Dark Chocolate Tart 4/5

If you still have space, you can wrap up your lunch with the Dessert of the Day ($10). Ours happened to be the Dark Chocolate Tart which consists of 65% dark chocolate ganache and lined with salted peanut paste. A simple but yet elegant dessert to wrap up a wonderful lunch.

I am glad that I have told time to check out Maggie Joan's new expanded lunch menu. The standard and quality of their food are still consistent and good. I would highly recommend the Cured Salmon Tartare, Fried Chicken Sandwich and Homemade Pappardelle if you plan to drop by the restaurant for lunch.

During the Singapore Food Festival in July 2016, I took part in a food tour at East Coast Lagoon Food Village, Hawker Spotlight and was introduced to the stall Choon Hiang (春香). The stall used to be in Macpherson before relocating to its current place in 1979.

Fried Kway Teow 4/5

Actually during our food tour, we were introduced to the Fried Kway Teow ($3/$4/$5/$8). After taking a bite of the fried kway teow, the aroma of the wok hei hit me and I instantly gone for more. The version is neither too dry or wet, the texture that I enjoy. The sauce was also not overly sweet, coating the noodles evenly accompanied with generous ingredients such as cockles, fish cake, Chinese sausage, bean sprouts and egg.

Fried Hokkien Mee 4.2/5

With the distinction showing of the fried kway teow, I went back to the stall to order a plate of Fried Hokkien Mee ($4/$5/$8). I am glad that I did so as the plate of fried hokkien mee turned out to be even better than the fried kway teow. The sweet and flavourful stock was well infused into the noodles. The fact that the stall uses more beehoon, it helps to absorb the beautiful stock even more.

I have to say Choon Hiang has been rather under the radar all these years. If not for the food tour, I would not have noticed the stall. Probably it has been over shadowed by the more popular stalls in the food village. Now I have another option to choose from when I visit the food village. Well it is a good problem.

Ding Ji Mushroom Minced Meat Noodle @ Bishan Street 22 - A Hearty Bowl of Fish Maw Soup With Noodle

I was introduced to Ding Ji Mushroom Minced Meat Noodle at Bishan Street after hearing it from Maureen aka MissTamchiak when she discovered the stall. Things then went viral and queue started to form at the stall with waiting time up to 2 hours. The good thing is that this place is opened around the clock, 24 hour. So I was able to check out the place in the wee hours when it was not as crowded.

Fish Maw Soup Noodle 4/5

I had the most expensive item on the menu which is the what I came for, the Fish Maw Soup with Noodle ($8). The bowl of noodle comes with a lot of ingredients such as fish ball, dumpling, pork slices, liver, mushrooms, egg and fish maw.

Besides the generous amount of ingredients, the other highlight is the robust soup. The soup based was sweet and came with a subtle taste of Ti Poh or dried sole fish. That provided the soul for the bowl. While the Seng Kee version with its strong Ti Poh flavoured soup hits you like a tank, the version here is more gentle and it a way more balanced. So it really is subject to individual preference and palate.

Bak Chor Mee Dry 2.5/5

Since I have came all the way to check out the stall, I might as well made the best of my trip. Hence I ordered another bowl of Bak CHor Mee Dry to try. Unfortunately it was a disappointment. The chilli and vinegar sauce did not carry any weight at all to match the noodles. It was rather lacklustre.

If you like to check out the stall, I would recommend going for the fish maw soup as this is the highlight here. The other noodle dishes are ready so so. To be fair, don't let the waiting time and personal preference distort your judgement. To me this is a hearty and comfortable bowl of fish maw soup that I have enjoyed and I would go back again for it.

Freshly baked breads with rich creamy butter are invariably served in any French restaurants. Brought to us in a mini haversack, the buttery aroma of their homemade breads was mouthwatering. With the bottom filled with warmed pepples, the mini haversack was a live oven, toasting the breads for a good one hour.

Amuse Bouche 3.8/5

Our Amuse Bouche showcases Chef Keisuke's delicate mind. Despite their tiny frames, they seems to have the ability to trickle each of my taste buds, especially the Hokkaido scallop crowned with caviar and bound to a crunchy tapioca chip using mascarpone cheese. The chemistry between the ingredients was unexpected. The sweet corn mousse in egg shell is really cute, with crunchy popcorns for textural contrast.

Spanish Red Urchin/ Smoked Tofu/ 10 Years Miso / Fried Green Beans 3.5/5

The highlight of this dish is the creamy Spanish Red Urchin that spread across the tofu. Judging from its tanner body, it does have a deeper oceany taste than usual, hence supporting it with tofu is just apt. Smoked in situ, the mild tasting homemade tofu acquired a smokey flavour which was accentuated by savoury aged miso. The fried green beans was slightly chewy, that adds an interesting bite to the crunch.

Mushroom/ Prosciotto Blancmange/Coffeebeans 3/5

Traditionally, Blancmange is a sweet dessert, commonly made with milk or cream and sugar thickened with gelatine. However, over here, we had it paired with savoury mushroom base. Somehow I relate it to a thick mushroom soup. Instead of having the usual croutons, I have a chewy Prosciotto Blancmange. I appreciate the potency of the mushroom base but overall it was a little cloying for me.

Hokkaido Crab/ Japanese Apple/Gazpacho/Yuzu Jelly, Celery Root Cube 4.5/5

Perhaps the richness of the previous dish is to prepare our tastebuds for the Hokkaido Crab, with texture and flavours of the other end of the spectrum. We were served a plate sprayed with sherry liqueur, invigorating our senses before tasting the next dish. Along with sweet, crunchy Japanese apple and celery root cubes, the delicate beautifully encased within its shell and a layer of sweet, tangy yuzu jelly. You may choose to eat it as it is or plate it onto the dish given. The tomato gazpacho was tangy with a spicy edge. It was like a virgin mary mocktail that fire up the overall taste.

Amadai/ Black Truffle/ Koshihikari/ Seaweed 4.5/5

My favourite dish for the night is the Amadai. What makes this dish so delightful is not simply because of the premium fish used but the risotto at the bottom. Made using Koshihikari, which to some is the crown jewel of Japanese short-grain rice. It is noted for its sweet nuttiness. Being slightly sticky, it gives the risotto the desired texture. Served like Japanese tea rice, I was curious as I would imagine the risotto losing that wonderful stickiness and flavour. That, surprisingly, was taken care of. The rice had been prebaked. Just imagine eating the burnt rice at the bottom of the claypot but with the accompany of a broth that was enriched with the goodness of the buttery Amadai.

Japanese Wagyu Steak in Nippon-Rossini Style 4/5

Japanese Wagyu Steak is one of their signatures here. Rossini Style, as I read was invented by the great French chef Auguste Escoffier for the Italian composer, Gioachino Rossini in the 1800s. It is characterised by the decadent foie gras terrine and Japanese mushroom paste truffle atop. Putting the extravagance aside, what I appreciate is the Nippon aspect, using autumn ingredients - yellow & red beets, roasted yam and onions.

Passion Fruits/ Mikan/Lychee 4/5

To clear our palate for dessert, we had a refreshing Passion Fruit Slurpee made with mikan juice and lychee jelly. I love the eco friendliness of drinking directly from the passion fruit itself.

Before our dessert, a basin of burnt old leaves was presented to us to showcase the significance of our dessert, roasting sweet potato over old dried leaves collected around their living spaces.

Underneath the stalk, crafted using fried sweet potato chips and chocolate, was perhaps how it feels like being in Japan during autumn. The cold salted caramel ice cream was like a cool breeze against the warm, sweet and comforting sweet potato mash, made simply with just egg and cream. It's interesting to see how Chef can overturn a ordinary root into something so captivating.

Opening the box of Small World is like unveiling a box of chocolate - you never know what you are gonna get. What steals our heart was the honeyed chewy Canelé and the bitter-sweet green tea mousse.

Among all the stunning dishes, do not miss out this bowl of unassuming looking cookies. Bring the bowl near you, and allow your mind to be sooth by the fresh, orangy fragrances of the tea leaves, comprising rooibos and oolong. Not only you get to smell it, you get to eat it as all these wonderful fragrances has infused into the buttery cookies.

I enjoy all the small details that was being incorporated throughout the evening. From presenting the sweet corn eggs in an enclosed wooden box before unravelling them, like discovering a golden goose egg, to burning of old leaves, which instantly instilled in my mind a image of them roasting sweet potatoes over them back in their homes in Japan, I don't just get to taste the autumn dishes, I almost get to feel what it is really like to be in Japan at this time of the year.

This Wakon-Yousai menu is $118, with Wine Pairing $120(6 Glass).

Costa 269 @ Holland Village - Croffle (Croissant + Waffle)

Costa Singapore’s newest flagship store at Holland Village, has launched the brand’s first café style outlet with a hot kitchen, Costa269. That means your order will be made fresh on the spot and not simply grabbing off from the display shelf and pop into the oven or worse still microwave. Apart from offering the classic breakfast favourites, as a London coffeeshop, the menu also draws inspiration from the British's.

Like any other Costa outlets, the interior of their flagship store is just as stunning. Double storey high, the place is so much more conducive than its neighbouring one. Croissants seems to be the love of our century. Despite tasting just as delicious on its own, it was meld with donuts (Cronuts), before somebody decided to impregnated it with sinfully indulgent lava-ish fillings. This flaky, fluffy and buttery viennoiserie-pastry seems to behold infinite possibilities. Over here at Costa, croissants has once again stretched its boundaries and evolutionized into Croffle, the star of their brunch menu.

The Great Croffle Fry-Up ($17) embodies Costa’s British heritage - A sunny-side up egg sat atop the croffle, with side sautéed mushrooms and a beef sausage made from ground beef, tomatoes and onions. Though the croffle takes on a waffle persona, I like the fact that its crescent identity remains. I was surprised by the sound of that crispiness as I sunk my cutlery into the croffle, especially at the edges and where the grooves were. Sweet and buttery like croissant with flaky layers, but a relatively denser and chewier body of a waffle. For those who usually find croissant too airy too be satisfying, this could be perhaps the solution to that. Not a preserved meat person, the beef sausage was surprisingly likable, due to its meaty texture that has a rather balanced flavours of sweet and savouriness. Perhaps, I wasn't expecting much from a sausage from a chain café. Fans of fried chicken waffle, this should definitely be in your check list.

Other classic items such as Avocado on Toast ($11) and The Salmon & Scramble Bagel ($14) are healthy options to go for. I assume that avocado is a pretty pricey ingredient due to its perishable nature, hence seeing it on the menu was surprising. Although it seems to be a plain Jane compared to the others in the list, I like the elegance of it and the fact that I have started off my day, or even ended my day with such clean goodness. I would recommend adding sautéed mushrooms, which were just as good as any other served in bistros.

I'm not a fan of bagel as I find given its dense body, the ingredients that come with it are often too little to balance it, which is the case for theirs. The portion of the salmon and eggs need some beefing up.

You can also simply skip the typical savoury brunch and head straight to their Very Berry Croffle ($11). We had our served with an enormous scoop of salted caramel ice cream (you can also choose chocolate or vanilla), and topped with sliced strawberries and blueberries dusted with icing sugar. The croffle remains quite crispy under the icy cold ice cream, unlike waffles which tend to become soggy after a while. The combination of the ice cream, berries and the flaky, buttery croffle was quite divine. It would have surpassed my expectations more if it is served with a berry-based sauce rather than a ordinary maple syrup. Afterall, it is called very Berry, and especially when they have a hot kitchen to do it.

Compared to their ready-made items, this brunch menu is definitely many times more enticing. I thought the hot kitchen is slightly under utilised with their current range, before I got to know that the outlet will soon be introducing new items like craft beers and a grill-led menu. As a testbed for their future stores and given the location which they have chosen, the success of this concept will definitely positioned them a level higher than its competitors.

Having been staying in the West for up to 2 years, it was only recently that I get to know that there was a Vietnamese restaurant near my place. I was researching where I can find Bun Cha in Singapore, the very dish that President Obama had with Anthony Bourdain in Hanoi. Uncle Ho Tuckshop is actually located off the West Coast Highlight, along Pasir Panjang Road inside a commercial building. It is off the main road, no wonder I have never spot the restaurant all this time.

Fried Spring Roll 4.2/5

We started will some Fried Spring Roll ($8.50) for lunch before our mains. The spring rolls were crispy and stuffed with minced meat. The full flavour and texture enjoyment is always my choice over the Vietnamese spring roll which I find it too bland to my liking.

Pho Beef Combo 4/5

A typical dish that I will always order when I visit a Vietnamese restaurant is the Pho Beef ($9.90). I had the combo which comes with beef slices and beef meatball. The sweet broth, smooth rice noodles and the fresh ingredients all came together for a comforting and hearty dish. A little disappointment is that the pho beef does not come with sides of beansprouts and mint leaves.

Hanoi Bun Cha 4/5

For Vietnamese cuisine, we are more familiar with their spring roll, banh mi and pho. However President Obama has made Hanoi Bun Cha popular to the world. This is my first time having the Hanoi Bun Cha ($12.90) in which the rice vermicelli and sweet soup is served separately.

The sweet soup comes with a mixture of vegetables, onions, grilled pork belly and grilled meatball. Some chopped chillies are added into the soup for a spicy kick. To eat, we have to dip the rice vermicelli into the soup, coating the noodles with the sweetness, for a slurping goodness. For me, the real highlight of bun cha is the grilled meatball which is well seasoned, flavourful and juicy.

Overall, the food at Uncle Ho Tuckshop is above average and it is wallet friendly. On top of that, the relax and casual dining is quite cozy during my visit on a Saturday afternoon. I would probably go back and try their banh mi in my next visit.

Summer Palace at Regent Hotel Singapore is one of the Cantonese restaurants that has been in my bucket list for a while. The restaurant is helmed by Executive Chinese Chef Liu Ching Hai who has over 20 years experience in fine Cantonese cuisine. Being new to the restaurant, we opted for the six-course dinner tasting menu ($76 minimum 2 pax) so as to try a bit of everything. Even so we actually took a while to decide on the order as there was 4 dinner tasting menus to choose from. Well a good problem isn't it?

The Six-course Dinner Menu ($76 minimum 2 pax) started with a Trio of Appetiser that is changed daily. On the plate, there were suckling pig, softshell crab with chicken floss and wasabi prawn with mango. A delightful trio to kick start the night.

Braised Bird's Nest with Conpoy and Crab Meat 4.5/5

Following the appetiser, we were served a bowl of hearty and comforting Braised Bird's Nest with Conpoy and Crab Meat. The highlight for me was not the bird's nest but the chunky fresh crab meat that elevated the whole luscious enjoyment.

Pan Fried Garoupa Fillet and Kai Lan in Superior Soya Sauce 3/5

The next dish we had was from the sea, Pan Fried Garoupa Fillet and Kai Lan in Superior Soya Sauce. I enjoyed how the sauce interacted with the fish however the texture of the garoupa fillet was slightly on the dry side.

From the land, we are served Sliced Wok Fried Venison with Angel Luffa and Black Fungus in XO Sauce. Overall it was a good dish with the XO sauce lending a spicy kick to the the tender and juicy venison.

Braised Noodles with Prawns, Ginger and Spring Onions 4.5/5

Like every Chinese dinner, the second last course before dessert is either a noodle or rice dish. The menu definitely has saved the best for the last. The Braised Noodles with Prawns, Ginger and Spring Onions is so delicious that I was screaming for more of the noodles which was well infused with the beautiful flavours.

Ending the six-course dinner menu is a trio of desserts. Nothing fancy but a decent combination of desserts to draw the curtain to the dinner.

Ah Hui Big Prawn Noodle @ Kovan Food Centre - Famous Long House PrawnNoodle Opens 2nd Outlet.

The famous long house Ah Hui Big Prawn Noodle at Balestier Food Centre has opened a new outlet at Kovan Food Centre. The Kovan branch is helmed by the founder himself Mr Tan Ah Hui. A slight different here to balestier stall is the use of tiger prawn instead of angka prawn.

Prawn Noodle Dry 4.2/5

The Prawn Noodle Dry ($5) comes with the noodle and prawn separated. Five huge halved prawns can be found in the flavourful soup. I was telling my dining partner that the soup tasted somehow different from the balestier branch. It is more herbal here.

The other highlight of the prawn noodle dry hae bee hiam sauce that is added to the noodle. Instead of the usual chilli sauce or oil, the hae bee hiam further accentuated the whole enjoyment of the noodles with its savoury and spicy kick.

For an additional of $1, we can add pork ribs to our prawn noodle. Besides the flavourful herbal soup, the topping of pork lards and fried shallots enhanced the whole flavour.

Pyxiemoss @ North Canal Road - Inventive Small Plates In Adventurous Ways

Pyxiemoss is a new modern European cuisine restaurant spearheaded by Chef Tim Ross-Watson that has taken over the defunct D'Bell at North Canal Road. Pyxiemoss is derived from Pixie Moss, the only flowering moss over 12,000 species. It alludes the restaurant's aspiration to blossom and flourish in the competitive F&B industry. The cuisine here offers a flair of British with Asian influenced, using both traditional and modern cooking techniques to transform simple daily ingredients into novel dishes.

Pigaroon 3/5

The restaurant is kind enough to give a glimpse of the bar snacks offering which are only available after 10pm. We tried both the Pigaroon ($3) and Carrot Dog ($5/pc). The pigaroon is interestingly presented in a flower pot. What is on the plate is actually ethereal beetroot macaron swirl paired with pickledpig skin with cream cheese encased in pork belly and smoked bacon on a stick.

Carrot Dog 4/5

Carrot Dog sounds like a weird dish but the vegetarian interpretation of the hot dog actually works. The char grilled baby carrot is sandwiched between the soft and pillowy focaccia, and topped with achar and curry leaves. The whole combination of sweet and sour worked harmoniously for a delightful bite.

The Seaviche ($8) is an interesting twist substituting raw seafood with fresh sea coconut. Give the dish a good toss and have it together with the hickory-smoked corn chips. Even with the squeeze of the lime, I still find it lacked the punch that you get from the traditional ceviche, missing that strong tangy and spicy burst of flavours.

One of my favourite dish at the new Pyxiemoss is The Tribbiani ($15). The yellow dome shape thing on the plate is actually duck liver mousse. The silky and creamy duck liver mousse is paired with crunchy focaccia chips and pedro ximenez soaked medjool date jam. A luscious dish which is truly an indulgent.

Cofflee Lox 4.2/5

A light and refreshing dish on the menu is the Cofflee Lox ($18). The thinly sliced Norwegian salmon is cured using upcycled coffee grinds. This is perfectly matched with fresh chervil, cucumber, refreshing green apple sorbet and freeze dried grapefruit for acidity. A well thought and balanced dish.

Rad-ish 4/5

This may sounds simple but the Rad-ish ($8) is actually braised thrice before serving to the table. It is first braised in salt water, then miso water and lastly onion broth to expel its bitterness. A robust onion consomme is pour over the radish wheel at table which is topped with yuzu miso and pickled red radish. You can choose to have chopped wagyu beef for an additional $4.

Not Just The Tip 4.8/5

A dish that I never thought I would enjoy is Not Just The Tip ($14). A smart dish which makes use every part of the celery, not just the tip. A rift on the Waldorf salad, the dish uses the root, leaves, stem and the tip of the celery for different textural enjoyment of the whole celery. It is further paried with barley risotto, green apple, candied walnuts and stilton cheese to bring the dish together.

Mother's Lamb 4.2/5

The Mother's Lamb ($18) demonstrates Chef Tim's bold approach to food, upcycling usually-discarded parts of select produce. On the plate, is tandoor oven cooked lamb hearts and neck, with two sinful slabs of lamb bacon. The touch of having carbonated green and purple champagne grapes is very thoughtful, which helps to cut through the richness perfectly.

Pina Colada 4.2/5

Ending the meal on a sweet note, we have the Pina Colada ($10) and Snickerz ($10). The Pina Colada is a deconstructed rendition of the popular cocoktail's key ingredients. In the bowl, the components consider of fermented young coconut cake, coconut granola, salted coconut cream, compressed pineapples in extra virgin olive and a creamy caramelised pineapple ice cream. A light and refreshing dessert that suit my palate.

Snickerz 3/5

The other dessert, Snickerz ($10) is a rich and heavy glutinous rice brownie which comes with pavlova-like salted gula melaka cream . It is both chocolatey and chewy. I did not quite like the texture of the brownie. However the nuggets of caramelised peanuts rolled in homemade Snickers-inspired powder got my attention.

Overall, I have enjoyed my dining experience at Pyxiemoss. I find Chef Tim has brought something fresh to the table. You never know, the pixie moss may actually blossom and flourish into one of the best new restaurants this year.
